Harvested by hand, the grapes used in our Sauvignon Blanc rest and cool overnight before being destemmed and pressed. The first harvest takes place at lower sugar levels, adding fresh green notes and crisp acidity to the final wine. The second harvest occurs once the grapes are physiologically ripe, enhancing the tropical fruit flavours and complexity of the wine.
This two stage harvesting method results in a balanced wine with harmonious acidity. A layered Sauvignon Blanc with notes of passion fruit, gooseberry and ripe fig.
All wine is sold in 6 bottle cases.
A combination of early and late harvesting of grapes produces a complex Sauvignon Blanc. Lees contact for 3 months to give fullness to the wine.
This Sauvignon Blanc has a green/ yellow tinge. The nose displays passion fruit, gooberies and ripe figs. A fruit driven wine with a crisp and zesty finish
